Chicken and pumpkin cake


150 grams of chicken breast

150 grams of pumpkin

1⁄2 onion

1⁄2 pepper

1 scallion

1 carrot

1 tablespoon of mustard

Soy sauce

Olive oil



How to make chicken and pumpkin cake:

We will start this cake by preparing one of the protagonists. We will cut the chicken breasts into pieces of more or less the same size. We will get some perfect cubes that we will start browning in the frying pan with a little oil.

We remove the chicken and continue cooking the vegetables. Peel and cut the onion, pepper, spring onion and carrot. We will poach these ingredients until they are tender, we will start with the onion, we will continue with the pepper and carrot and finally the chives.

While they are cooking, we can prepare the pumpkin. We will use a piece or a whole pumpkin, depending on the size. We are going to peel it and cut the pieces, cook the boiled pumpkin with water and salt or bake it at 180o for about 25 minutes. We must obtain the base of a puree that will become one of the stars of this main dish.

We rectify the vegetables with salt and pepper and reserve them. We can add some Provençal herbs that will give them flavor and color, with two tablespoons of soy to provide an original point that will contrast perfectly with the sweetness of the pumpkin.

We prepare a baking dish. We put a layer of pumpkin puree. On top of the chicken with the vegetables and we will crown with more pumpkin. If we like it, we can add some breadcrumbs with cheese, it will give a special flavor and a crunchy touch to this cake.

We will bake at 180o for about 25 minutes until a light and delicious chicken and pumpkin cake is ready.
